Ode to Jello

I've been thinking a lot about jello lately. It started over Thanksgiving when my friend, Lisa, made a strawberry jello salad kind of thing. It had a pretzel crust, a layer of cream cheesy whipped cream, and strawberries mixed in strawberry jello on top. It was delicious! Then we started talking about the many jello salads that are served with holiday meals. There's the clear jello one filled with celery, carrots and nuts. Sweet...but more salad like in taste. Jello salads can also be made with marshmallows, cottage cheese, a variety of fruits, mayonaise, and salad dressing. Some people consider them a side dish while others think of them as more of a dessert type item. We took a poll of the 6 adults in the house, and I think we came out even on the dessert vs. side dish debate. Our jello salad was eaten with the main meal even though I would have technically called it a dessert...it was too sweet and decadent to be anything else!

And since Thanksgiving there have been several other jello moments. So I decided to write this post.

Lemon, Lime, Berry Blue, Grape, Raspberry, Strawberry-Banana, Wild Strawberry, Black Cherry, Cranberry, Cherry, Mixed Fruit, Strawberry, Strawberry-Kiwi, Watermelon, Peach, Orange, Apricot, Cranberry-Raspberry, Pineapple, Green Apple, Margarita, PiƱa Colada, Strawberry Daiquiri, Fruit Fiesta, Melon Fusion, Tropical Fusion...all jello flavors!

And you can mix the jello powder with 7-up or ginger ale to make a sparkling version of this yummy treat!

Hmmm...such a versatile food item that jello. I can't even tell you how many recipes I found for jello when I looked. You can sneak jello into almost anything and not even realize it!

I love jello. Mostly as a dessert. Lime jello is my favorite...the combination of sweet and sour topped with whipped cream...yum. And like their campaign slogan says..."There's Always Room for Jell-O."

yum. i love that pretzel one. but my personal favorite is called 7 up salad. mix lemon jello (4 ounce pack) in blender with 1 cup hot water and 8 0z cream cheese. Then add 1 cup cold sprite/7-up. Pour into bowl (this is the hard part b/c you really just want to drink it...) and sprinkle with pecans. After it sets...mmmmmm...

My favorite "jello salad" is the one served in the movie "Christmas Vacation"...I think it was green and had cat food in it. HA!!

the bad news is though, i made jello for my boys for the first time for thanksgiving and they hated it. they really are more french in their food tastes...

I have to say that while I don't hate Jello, it's not something I'm ever really dying to eat. I'm sure there are some yummy concoctions of it out there, but my mom used to call the one with celery and carrots "Perfection Salad". I truly believe that vegetables mixed into Jello could only be described as anything BUT perfection. I mean if that is perfection, I would hate to see what ingredients a jello "Mediocre Salad" would contain. Maybe the cat food described by another commenter above?? :)
