Zucchini Fritters...American style

2 cups grated zucchini, peeled or unpeeled
2 eggs, beaten
1/4 cup chopped onion
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
salt to taste
2 tbsp vegetable oil

In a medium bowl, combine the zucchini, eggs, onion, flour,Parmesan cheese, mozzarella cheese, and salt. Stir well to distribute evenly.
Heat a small amount of oil in a skillet over medium-high heat. Drop the zucchini mixture by heaping tablespoonfuls and cook for a few minutes on each side until golden. Serve hot.

Kabak Mucveri...Turkish Style

2 cups grated zucchini (peeled for Turkish style)
1/2 cup onion
2 eggs, beaten
3 tbsp flour
1/2 cup feta cheese, crumbled into small pieces
1 small tomato, peeled, seeded, and chopped
1 bunch dill, chopped
1/2 bunch Italian parsley, chopped
1 tsp salt
1/2 tsp pepper
1 tsp dried mint
2 tbsp olive oil

Sprinkle squash with salt. Knead and squeeze to extract extra juice. Drain well. Add remaining ingredients and mix well. Heat oil in frying pan. Drop the zucchini mixture by tablespoonfuls and cook for a few minutes on each side until done. Serve hot...or cold!

Mmmm...both recipes sound good, but last time I tried to 'grate' zucchini, it ended up looking like soup! (we tried it in a blender...that didn't work too well!)
